Come rain or shine, nachos can be enjoyed. Why not grab the BBQ this summer and make some nachos straight over the grill.
Step 1: Take a foil tray (12 inches wide would be perfect - like the kind that your turkey goes in at Christmas) and spray it with cooking spray to lightly coat the outside.
Step 2 : Spread a layer of tortilla chips over the bottom of the tray.
Step 3: In a bowl mix a can of black bins (washed, rinsed and lightly mashed), some chopped green chillies (to taste) and 2 tsp of taco seasoning (or to taste). Mix together and then spoon over the layer of tortillas.
Step 4: Chop two large tomatoes and 1-2 onion/s (dependent on size). Grate 100g of cheese (we prefer cheddar). Sprinkle the chopped tomatoes, then chopped onions, followed by the grated cheese over the tortillas.
Step 5 : Cover the tray with foil and then place the covered foil tray on a medium heat. Grill for 8 to 10 minutes (dependent on heat of grill) or until the cheese melts.
Step 6 : Safely remove from the grill and allow to cool slightly.
Step 7 : Help yourself to Nachos!
